Ingredients For dad's rice pudding

1/2 crice, uncooked

2 clight cream (or half-and-half)

2 cmilk
-
3/4 - 1 csugar

1/4 tspsalt
-
4eggs
-
1/2 craisins (or dried sweetened cranberries or cherries)

2 Tbsppure vanilla extract
-
nutmeg (freshly grated is best)
How To Make dad's rice pudding

1Mix rice, milk, cream, sugar and salt in the top of a double boiler.

2Cover and cook over boiling water for about 1 hour (or more, until tender,) stirring occasionally.

3Beat eggs in a bowl.

4Slowly dribble rice mixture into eggs, beating constantly.

5Return mixture to top of double boiler and continue cooking until mixture coats spoon.

6Remove from heat; stir in raisins and vanilla; stir in nutmeg to taste. Serve. Cover and refrigerate leftovers.
