Ingredients For dad's rice pudding

  • 1/2 c
    rice, uncooked
  • 2 c
    light cream (or half-and-half)
  • 2 c
    milk
  • 3/4 - 1 c
    sugar
  • 1/4 tsp
    salt
  • 4
    eggs
  • 1/2 c
    raisins (or dried sweetened cranberries or cherries)
  • 2 Tbsp
    pure vanilla extract
  • nutmeg (freshly grated is best)

How To Make dad's rice pudding

  • 1
    Mix rice, milk, cream, sugar and salt in the top of a double boiler.

    Cover and cook over boiling water for about 1 hour (or more, until tender,) stirring occasionally.

    Beat eggs in a bowl.
  • 4
    Slowly dribble rice mixture into eggs, beating constantly.

    Return mixture to top of double boiler and continue cooking until mixture coats spoon.

    Remove from heat; stir in raisins and vanilla; stir in nutmeg to taste. Serve. Cover and refrigerate leftovers.
