My dad always loved the large pearl tapioca(we called them frog's eyes)pudding. I always burnt it when I made it on the stovetop. This is much easier and doesn't burn!

Ingredients

  • 1/3 cup large pearl tapioca-soak in hot water for 2 hours and drain.
  • 2 1/4 cups milk
  • 1/4 teaspoon salt
  • 2 - eggs
  • 1/2 cup sugar
  • 1/4 teaspoon vanilla

How To Make crockpot tapioca pudding

  • Step 1
    Put all ingredients in crockpot, except vanilla. Make sure that eggs and other ingredients are mixed through.Stir occasionally as it it cooking.
  • Step 2
    Cook puddling at medium heat approximately 3-4 hours or until pudding is at desired thickness
  • Step 3
    Add vanilla and eat warm or cool.
