1Cook rice, milk and butter in a double boiler until rice is done (actually when the rice has absorbed all the milk).
2Mix in a deep baking dish (2-1/2 qts) the beaten eggs, milk, evaporated milk, sugar and vanilla. Add the cooked rice mixture and stir. Put baking dish in a pan of water (about inch) and bake in the oven for 60 minutes. Sprinkle with cinnamon and nutmeg. Raisins are optional...my family does not like raisins in their rice pudding.
