creamy rice pudding

This pudding is so creamy and delicious. The kids wanted rice pudding tonight, so I made them Grams recipe. I remember loving this as a kid and still do. If you have 45 minutes, you can be enjoying this delicious comfort food too! One of the best I ever had. My photo's

Ingredients

  • 3/4 cup uncooked white rice ( i used uncle bens long grain rice )
  • 2 cups water ( if using long grain) if using medium use 1 1/2 cups water
  • 2 cups milk, divided
  • 1/3 cup sugar or more if desired
  • 1/4 teaspoon salt
  • 1 - egg,beaten
  • 1/4 teaspoon cinnamon, or more if you prefer
  • - pinch nutmeg
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla

How To Make creamy rice pudding

  • Step 1
    Bring 1 1/2 cups water to a boil in a saucepan, ( if using long grain rice use 2 cups water) stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes. If rice is not tender after the 20 minutes, add a bit more water and cook a bit longer. Mine was cooked within the allotted time.
  • Step 2
    In a bowl mix 1 1/2 cups milk, sugar and salt. In the same saucepan as you cooked the rice, add the milk mixture. Cook over medium heat until thick and creamy, 15 to 20 minutes.
  • Step 3
    While rice is getting thick, in a bowl; mix the remaining 1/2 cup milk with the beaten egg and spices.
  • Step 4
    After the rice has thickened, whisk swiftly the egg and milk mixture into the rice, cook 2 minutes longer.
  • Step 5
    Remove from heat and stir in the vanilla and butter.
  • Step 6
    When serving, if desired, sprinkle top with additional cinnamon or nutmeg. It's delicious! Enjoy
