cold biscuit pudding

a southern twist on bread pudding! (not my recipe but a dear friends) it was a passed down family recipe so alot of it is eyeballing and just having been in the kitchen when it was made. I've had it and it's delicious, I also know someone on this site was looking for a cold biscuit pudding recipe so i hope this helps!!

Ingredients

  • - left over biscuits
  • - milk, enough to cover biscuits
  • - sugar, enough to sweeten
  • - 2 eggs
  • - 1 teaspoon vanilla extract, or 1 teaspoon nutmeg
  • - 1/4 cup of butter
  • - 1/2 cup of raisins or golden raisins (optional)
  • CHOCOLATE SAUCE
  • 1 tablespoon all purpose flour
  • 1/2 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1/2 cup milk
  • 1 tablespoon butter

How To Make cold biscuit pudding

  • Step 1
    Crumble biscuits in a bowl. Add just enough hot milk to cover. Let stand about 10 or 15 minutes.
  • Step 2
    scramble eggs in a bowl.
  • Step 3
    Mash biscuits well. Add eggs, sugar, vanilla extract or nutmeg and butter.
  • Step 4
    Pour into a black cast iron skillet and bake at 325 degrees F until done. Baking time will depend up on the size of the pan used.
  • Step 5
    For chocolate sauce: Place all ingredients except butter into a saucepan, and cook over low heat, stirring constantly, until thick. Add butter, and stir just until butter melts. Serve over hot Biscuit Pudding.
