coconut rice pudding for 2
Another one of my experiments. I wondered what it would be like to use coconut milk for my rice pudding, The results were really tasty. You can use regular milk and omit the coconut extract if you want. Great if you only need 2 servings.

Ingredients
- 2 cups cooked long grain rice
- 2 cups coconut milk ( 13.5 oz can)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract

Step 1In med sized sauce pan mix,cooked rice, coconut milk, sugar, and salt

Step 2cook and stir uncovered approx 15-20 minutes or until thick. Remove from heat add vanilla and coconut extract. spoon into dishes.Top with whipped cream or Sprinkle with nutmeg or cinnamon if desired
