coconut rice pudding for 2
I wondered what it would be like to use coconut milk for my rice pudding, The results were really tasty. You can use regular milk and omit the coconut extract if you want. Great if you only need 2 servings.
- 2 c
- cooked long grain rice
- 2 c
- coconut milk ( 13.5 oz can)
- 1/4 c
- granulated sugar
- 1 tsp
- vanilla extract
- 1/2 tsp
- coconut extract
How to Make coconut rice pudding for 2
- 1In med sized sauce pan mix,cooked rice, coconut milk, sugar, and salt
- 2cook and stir uncovered approx 15-20 minutes or until thick.
Remove from heat add vanilla and coconut extract.
spoon into dishes.Top with whipped cream or Sprinkle with nutmeg or cinnamon if desired
