this is a hand me down recipe from my grandma. It's a delicious dessert with an island kick.

  • 1
    loaf day old french bread, diced
  • 2 can(s)
    evaporated milk
  • 1 can(s)
    cream of coconut
  • 3
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    almond extract
  • 1 tsp
  • 1 c
  • 1/2 c
    melted butter or margerine
  • 2 Tbsp
  • 1 c
  • 1/2
    almonds, chopped (optinal)

How to Make coconut bread pudding


  1. in large mixing bowl,mix diced bread with the 2 evaporated milks and 1 can of cream of coconut. Let stand for about 15mins.
  2. add 3 beaten eggs,then the rest of the ingredients.
    Pour into sprayed baking pan and bake approx. 1 hour or untill set in the middle @350 degrees.
