this is a hand me down recipe from my grandma. It's a delicious dessert with an island kick.

loaf day old french bread, diced
2 can(s)
evaporated milk
1 can(s)
cream of coconut
3
eggs
1 tsp
pure vanilla extract
1 tsp
almond extract
1 tsp
cinnamon
1 c
sugar
1/2 c
melted butter or margerine
2 Tbsp
flour
1 c
raisens
1/2
almonds, chopped (optinal)

How to Make coconut bread pudding

Step-by-Step

  • 1in large mixing bowl,mix diced bread with the 2 evaporated milks and 1 can of cream of coconut. Let stand for about 15mins.
  • 2add 3 beaten eggs,then the rest of the ingredients.
    Pour into sprayed baking pan and bake approx. 1 hour or untill set in the middle @350 degrees.
