coconut bread pudding

this is a hand me down recipe from my grandma. It's a delicious dessert with an island kick.

Ingredients

  • 1 - loaf day old french bread, diced
  • 2 cans evaporated milk
  • 1 can cream of coconut
  • 3 - eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1/2 cup melted butter or margerine
  • 2 tablespoons flour
  • 1 cup raisens
  • 1/2 - almonds, chopped (optinal)

How To Make coconut bread pudding

  • Step 1
    in large mixing bowl,mix diced bread with the 2 evaporated milks and 1 can of cream of coconut. Let stand for about 15mins.
  • Step 2
    add 3 beaten eggs,then the rest of the ingredients. Pour into sprayed baking pan and bake approx. 1 hour or untill set in the middle @350 degrees.
