1turn oven on to 350.
mix together the evaporated, condensed and coconut milk. set aside
2crumble all the bread into a large bowl. with a large spoon mix in the milk mixture. Mix well until all the bread is soaked. if need be, add regular whole milk until the bread is soaking. let sit for a few mins.
3add the rest of the ingredients and mix well.
spray non-stick spray on a 9x9 baking dish.
4pour the bread mixture, be careful not to over fill the baking dish.
bake at 350 for 50 mins. or until the top turn a beautiful brown color.
5remove from over, let rest for 25-30 mins. For easy snacking, the pudding can be cut into little cubes right from the pan. Serve coconut pudding cubes. Enjoy!
