Caribbean Coconut Rice Pudding

I like this recipe as you prepare it on the stove top vs. the oven.

  • 1/2 c
    jasmine rice
  • 2 c
    whole milk
  • 2 c
    coconut milk
  • 1/3 c
    granulated sugar
  • 2 Tbsp
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    ground cinnamon

How To Make

    Wash rice. Combine rice, milk and coconut milk in saucepan. Bring to a boil. Lower heat. Cook gently, stirring as needed for 1 hour or until rice is cooked and milk has thickened.

    Add sugar, vanilla, raisins and cinnamon. Cook for 5 additional minutes.

    Chill 1 hour before serving.
