- 1/2 cup jasmine rice
- 2 cups whole milk
- 2 cups coconut milk
- 1/3 cup granulated sugar
- 2 tablespoons raisins
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
How To Make caribbean coconut rice pudding

Step 1Wash rice. Combine rice, milk and coconut milk in saucepan. Bring to a boil. Lower heat. Cook gently, stirring as needed for 1 hour or until rice is cooked and milk has thickened.

Step 2Add sugar, vanilla, raisins and cinnamon. Cook for 5 additional minutes.

Step 3Chill 1 hour before serving.
