Whipped cream makes this pudding more creamy. The aroma of lemon and lavender is so perfect with blueberry and honey flavor. It's up to you, this pudding can be a dessert or breakfast :)

Ingredients

  • 1 cup blueberries, fresh
  • ½ cup whole milk
  • ½ cup whipping cream
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon zest
  • ½ teaspoon dried lavender buds
  • 4 tablespoons raw honey
  • 1 teaspoon plain gelatin powder
  • 1 pinch salt
  • WHIPPED CREAM :
  • ½ cup whipping cream
  • 2 tablespoons plain yogurt
  • 1 tablespoon raw honey

How To Make blueberry lavender pudding for two

  • Step 1
    Place 3 ingredients for whipped cream in a medium bowl, whip with hand mixer on high speed until light and fluffy. Covered the bowl and refrigerate.
  • Step 2
    In a blender, add milk, blueberries, dried lavender, lemon juice and lemon zest. Blend until smooth.
  • Step 3
    In a medium saucepan, simmer blueberries smoothie, honey, salt and gelatin powder on medium heat stove. Turn the heat off.
  • Step 4
    Strain the mixture with a fine strainer, make the mixture smoother (removing dried lavender buds and blueberries skin)
  • Step 5
    Pour into 2 - 7 oz glasses or ramekins, cover with plastic and place in refrigerator for 1 hour.
  • Step 6
    Serve with whipped cream on top of pudding.
