banana pudding

I got this recipe from my mom many years ago...My younger son loves banana pudding and requests it all the time. You can't get in a hurry though, it takes time for the custard to cook, but well worth it~

Ingredients

  • 1/2 cup granulated sugar
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large eggs-separated
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafers
  • 5-6 medium banana's
  • 1/4 cup granulated sugar

How To Make banana pudding

  • Step 1
    Combine 1/2 cup sugar, flour & salt in a double boiler pot. Stir in milk, whisk to blend well. Cook over boiling water until begins to thicken. Stirring constantly.
  • Step 2
    Remove from boiling water. Beat 3 egg yolks, adding slowly to the thickened milk. Whisk well, Return top of boiler to boiling water. Cook about 10 minutes or until thickened as custard should be; stirring constantly.
  • Step 3
    Remove from heat; Add vanilla. Stir well.
  • Step 4
    Preheat oven to 425 degrees.
  • Step 5
    Line a 2 quart dish with vanilla wafers. Then add a layer of sliced banana's, and a layer of the pudding. I continue layering until out of custard.
  • Step 6
    Beat egg whites with the 1/4 cup sugar until stiff peaks form.
  • Step 7
    Spread on top of pudding. Bake for 5 minutes or until evenly browned.
  • Step 8
    Cool. Refrigerate until ready to serve~
