baked apple & cranberries with dumplings
Gala apples were getting old, and I craved a dessert, so I cored, peeled and chopped them, and combined them in a casserole with fresh cranberries. Warm desserts are so satisfying in October! Using what I had and not wishing to make a very sweet pudding, I used honey and a small amount of cinnamon and sugar. For texture, I added chopped walnuts and made dumplings with a packaged mix. My husband remarked that "it was very good." Now that's a welcome comment!

Sweet apples and tart cranberries are always a yummy combo. This dessert isn't overly sweet but it is enough to satisfy your sweet tooth thanks to the honey and cinnamon. The dumplings are a biscuit type and go great with the apples. Delicious with whipped cream, but vanilla ice cream would be fab too. A perfect fall dessert!
Ingredients
- FRUIT AND NUTS
- 6 - gala apples, cored/peeled/sliced/chopped
- 1 cup cranberries, fresh whole, rinsed
- 2 tablespoons butter, melted in 1/1/2 qt. size casserole
- 4 or 5 tablespoons honey
- 1 tablespoon sugar cinnamon mixture (1 tbsp sugar, 1/4 tsp cinnamon)
- 1/2 cup walnuts, chopped
- DUMPLINGS
- 1 cup Bisquick mix; I used "low-fat mix"
- 4 tablespoons buttermilk
How To Make baked apple & cranberries with dumplings

Step 1Grease bottom of casserole dish; add chopped apples and spread cranberries.

Step 2Add walnuts.

Step 3Sprinkle with cinnamon/sugar.

Step 4Drizzle honey over all.

Step 5Bake in 350 degree preheated oven about 25 minutes.

Step 6Then top with Bisquick mixture/dumplings, about four small dumplings.

Step 7Continue baking uncovered for 20 minutes. Serve hot with whipped cream on top.
