apple n cranberry bread pudding w/vanilla glaze

Was just in the mood to make something with a FALL FEEL....so here ya go! Husband who doesnt favor sweets said it was yummy.

Ingredients

  • 2 large granny smith apples peeled, cored, chopped
  • 1/2 cup dried cranberries
  • 1 cup sugar
  • 1 quart whole milk
  • 1 can evaporated milk (not sweetend condensd)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup flour
  • 1 pound of day old italian, french or rolls-cut into cubes
  • - for glaze:
  • 1 cup whole milk or cream
  • 1 teaspoon vanilla
  • 3/4 cup confectioners' sugar
  • 1 teaspoon corn starch...or flour
  • 1/4 teaspoon cinnamon

How To Make apple n cranberry bread pudding w/vanilla glaze

  • Step 1
    In large bowl mix eggs, quart milk, evaporated milk, sugar, flour, vanilla extract, cinnamon, and nutmeg until combined.
  • Step 2
    butter a 13x9 casserole dish and add 1/2 cubed bread add 1/2 of the chopped apples and 1/2 of the cranberries. Pour 1/2 of the milk and egg mixture add remaining bread and repeat with apple and cranberries n then rest of milk mixture. Press down lightly with hands so bread absorbs liquid. Drizzle melted butter on top.
  • Step 3
    Bake on 375 for 35 to 45 min or lightly browned on top
  • Step 4
    to make glaze in small saucepan (or microwave) mix milk (or cream), vanilla, confectioners sugar and corn starch (or flour) and cinnamon. Bring just to a simmer and mix then drizzle over bread pudding....ENJOY
