flour
dash(es)
salt

vanilla
vanilla wafers (to layer)
5 or 6 medium
ripe bananas

How to Make Ali's Banana Pudding

Step-by-Step

  • 1Preheat oven to 425.
    Combine 1/2 c sugar with flour and salt in top of a double boiler. Mix in 1 whole egg and 3 egg yolks (save egg whites for Step 3). Stir in milk. Cook, uncovered, over boiling water, stirring occasionally, until thickened. Remove from heat, add vanilla.
  • 2FOR EACH LAYER:
    Spread small amount of custard on bottom of 1-1/2 quart casserole; cover with layer of vanilla wafers. Top with layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, banana and custard, to make three layers of each, ending with custard.
  • 3Beat remaining 3 egg whites until stiff but not dry. Gradually add remaining 1/4 c sugar and beat until mixture forms peaks. Pile on top of pudding, covering entire surface.
  • 4Bake in preheated oven for 5 minutes, or until delicately browned.
    Serve warm or chilled.
