1peel the zucchini very lightly so it shows a very light green (to make it look like a granny smith apple). slice zucchini in half lengthwise then the halves in half again. then slice. put into sauce pan and add sugar, water, lemon juice,cinnamon. cook until fork tender. then add a little cornstarch dissolved in a little water. add to zucchini mixture to thicken let cool a little. pour into unbaked pie shell.
2make streusel topping: sugar, flour, margarine, salt,nutmeg, cinnamon, and walnuts. mix together. put on top of pie
3bake at 350 degree oven for about 35 to 40 minutes or until crust is lightly brown and bubbly.
