zucchini pie
I don't know where this recipe originated from other than my cousin Kathy Zekoll used to make it all the time and everyone always loved it!

Ingredients
- 1 1/4 cups bisquick
- 3 cups raw zucchini sliced thin or coarse grated
- 4 - eggs
- 1/2 cup chopped onion
- 3 sprigs parsley - minced
- 1/2 cup grated cheese (i use cheddar & swiss mix)
- 1/2 cup oil (i prefer to use coconut oil)
- - salt and pepper to taste
How To Make zucchini pie

Step 1Preheat oven to 325 and grease your pie plate.

Step 2In a large mixing bowl combine all ingredients together. Pour mixture into your greased pie plate.

Step 3Bake at 325 degrees for 45 minutes or until golden brown.
