This was my Mother-in-law's recipe. . .that my Hubby loves. . .oh how I miss her!!! It looks like a a cream pie, but much more healthy. . . .VERY YUMMY!!! One of our favorites!

Ingredients
- 1 cup zucchini, peeled & cooked (measure after cooking)
- 1 cup sugar
- 1 - egg
- 1 1/2 teaspoons vanilla extract
- 4 tablespoons flour
- 1 cup carnation evaporated milk or milnot
- 1 - unbaked pie shell
- - cinnamon or nutmeg
How To Make zucchini pie

Step 1Blend ingredients in food processor & pour into unbaked pie shell.

Step 2Bake at 450 degrees for 10 minutes, then turn down to 350 degrees for 15 minutes until solid & knife comes out clean.

Step 3Sprinkle nutmeg OR cinnamon (whichever is to your liking) on top while cooling.
