This was my Mother-in-law's recipe. . .that my Hubby loves. . .oh how I miss her!!! It looks like a a cream pie, but much more healthy. . . .VERY YUMMY!!! One of our favorites!

Ingredients

  • 1 cup zucchini, peeled & cooked (measure after cooking)
  • 1 cup sugar
  • 1 - egg
  • 1 1/2 teaspoons vanilla extract
  • 4 tablespoons flour
  • 1 cup carnation evaporated milk or milnot
  • 1 - unbaked pie shell
  • - cinnamon or nutmeg

How To Make zucchini pie

  • Step 1
    Blend ingredients in food processor & pour into unbaked pie shell.
  • Step 2
    Bake at 450 degrees for 10 minutes, then turn down to 350 degrees for 15 minutes until solid & knife comes out clean.
  • Step 3
    Sprinkle nutmeg OR cinnamon (whichever is to your liking) on top while cooling.
