yam & almond pie
Made this for poker game night. Some of the men wanted sweet potato pie and some wanted pecan pie. All I had was yams and almonds so this is one of those times of creating something from what you have on hand. Guys loved it.

Ingredients
- DOUGH
- 3 tablespoons unsalted butter, softened
- 2 tablespoons sugar
- - pinch of salt
- 1/2 - whole egg, beaten till frothy (other half used in yam filling)
- 2 tablespoons cold milk
- 1 cup all purpose flour
- YAM FILLING
- 1 1/2 cups pulp from baked yams
- 1/3 cup packed brown sugar (light)
- 1 tablespoon sugar
- - rest of the beaten egg
- 1 tablespoon cream
- 1 tablespoon butter, softened
- - pinch of salt
- - pinch of cinnamon, allspice and nutmeg
- ALMOND PIE SYRUP
- 3/4 cup sugar
- 3/4 cup dark corn syrup
- 2 small eggs
- 2 tablespoons butter, melted
- 1 tablespoon vanilla extract
- - pinch of salt and cinnamon
- 1 1/2 cups minced almonds
How To Make yam & almond pie

Step 1Dough: Beat on high, butter, sugar and salt till mixture is creamy. Add 1/2 the egg and beat till completely mixed in. Add milk, and beat on high speed for 2 minutes. Add the flour and beat just until mixed in. Shape dough into a round patty. Put a little flour on it and then wrap in saran wrap and refrigerate for 2 to 24 hours. Roll the dough out on a floured surface to about 1/4 inch thickness. Lightly flour the top of the dough and fold in half and then half again in order to life into pie pan. Place into greased cake pan (8" round). Unfold and make sure it's centered and that is dough hanging over entire edge of pan. Trim excess dough. Refrigerate for approximately 20 minutes.

Step 2Yam Filling: Put all the ingredients into mixing bowl and beat on medium speed till smooth, about 3 minutes. Set aside.

Step 3Almond Filling: Mix all ingredients except almonds till mixture becomes opaque. By hand, stir in minced almonds and set this aside.

Step 4Assemble: Spread yam filling evenly on top of dough. Next pour almond syrup on top. Bake in a 325º oven for 1 hour 30 minutes or until a knife inserted into center comes out clean. Serve at room temperature.

Step 5NOTE: Any nut can be used in place of the almonds, they do not have to be minced. They can be halved or chopped. It's your preference.
