This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love

Ingredients

  • 8 ounces softened cream cheese
  • 1 cup powdered sugar (can sub w/ splenda)
  • 15 ounces can crushed pineapple-drained well.
  • 1 teaspoon vanilla extract
  • 1 - crt cool whip
  • 1/4 cup chopped nuts
  • 1 - 9" graham cracker crust

How To Make white mountain pie

  • Step 1
    In mixing bowl, beat cream cheese, sugar, and vanilla.
  • Step 2
    Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).
  • Step 3
    Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving. Best if refridgerated overnight!
