This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love

Ingredients
- 8 ounces softened cream cheese
- 1 cup powdered sugar (can sub w/ splenda)
- 15 ounces can crushed pineapple-drained well.
- 1 teaspoon vanilla extract
- 1 - crt cool whip
- 1/4 cup chopped nuts
- 1 - 9" graham cracker crust
How To Make white mountain pie

Step 1In mixing bowl, beat cream cheese, sugar, and vanilla.

Step 2Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).

Step 3Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving. Best if refridgerated overnight!
