This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him!
I still make it as it brings a 'little bit of Bobby' back to the table.
I dedicate this recipe to him.

No-Cook or Other


8 oz
softened cream cheese
1 c
powdered sugar (can sub w/ splenda)
15 oz
can crushed pineapple-drained well.
1 tsp
vanilla extract
crt cool whip
1/4 c
chopped nuts
9" graham cracker crust


1In mixing bowl, beat cream cheese, sugar, and vanilla.
2Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).
3Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving.
Best if refridgerated overnight!
