Pecan pie is a holiday staple and this pie is super yummy. The flavor is sweet with a hint of tang from the cream cheese. The filling oozes with delicious goodness. It's almost custard-like. This does not set up like a traditional pecan pie, so it's a little hard to slice. But, the taste is fantastic.
In a small bowl, beat cream cheese, 1/3 cup sugar, 1/4 teaspoon salt, 1 teaspoon vanilla extract, 1 egg on low speed until smooth. Set aside.
In another bowl, beat 3 eggs on medium speed. Add 1/4 cup sugar, 1 cup corn syrup, and 1 teaspoon vanilla extract.
Spread cream cheese mixture in bottom of crust. Sprinkle with pecans.
Gently pour egg mixture over pecans.
Cover crust edge with foil. Bake for 45 minutes or until done.
Cool completely (about 2 hours). Store in the refrigerator.
