upside down coconut custard pie
The name is a little strange but if you love custard and coconut you will love this pie..and it couldn't be easier. The crust actually floats to the top with the custard remaining on the bottom. The pie will rise and fall but don't be alarmed it is supposed to do that. I like to leave my pie in the oven a few minutes after I turn it off. The coconut top caramelizes and becomes candy like.

Ingredients
- 1 cup shredded coconut
- 3/4 cup sugar
- 1/2 cup baking mix
- 1/4 cup butter, softened
- 1 1/2 teaspoons pure vanilla extract
- 2 cups whole milk
- 4 - eggs, beaten
How To Make upside down coconut custard pie

Step 1Preheat oven to 325. Spray 9 inch pie plate with cooking spray or grease with shortening.

Step 2Combine all ingredients in a mixing bowl. Pour into prepared pie plate.

Step 3Bake 50-55 minutes, until golden brown and middle is set. Cool several minutes before cutting. Cover and efrigerate any leftovers. Good warm or cold.
