This is another one of Grandma's delicious coconut pie recipes.

Ingredients

  • 3 - eggs ; beaten
  • 1 1/2 cups sugar
  • 1/2 cup butter / margarine ; melted
  • 4 teaspoons lemon juice
  • 1 teaspoon vanilla
  • 1 1/3 cups flaked coconut
  • 9" - unbaked pie shell

How To Make toasted coconut pie

  • Step 1
    Thoroughly mix together : eggs , sugar , butter , lemon juice and vanilla ; stir in coconut.
  • Step 2
    Pour coconut mixture into pie shell.
  • Step 3
    Bake @ 350° for 40-45 minutes or until a knife inserted half way between center and the edges comes out clean.
  • Step 4
    I like to garnish with a dessert topping and sprinkle some toasted coconut on top or some whip cream and coconut..yummy.
