Ingredients
- 3 - eggs ; beaten
- 1 1/2 cups sugar
- 1/2 cup butter / margarine ; melted
- 4 teaspoons lemon juice
- 1 teaspoon vanilla
- 1 1/3 cups flaked coconut
- 9" - unbaked pie shell
How To Make toasted coconut pie

Step 1Thoroughly mix together : eggs , sugar , butter , lemon juice and vanilla ; stir in coconut.

Step 2Pour coconut mixture into pie shell.

Step 3Bake @ 350° for 40-45 minutes or until a knife inserted half way between center and the edges comes out clean.

Step 4I like to garnish with a dessert topping and sprinkle some toasted coconut on top or some whip cream and coconut..yummy.
