tina's amazing coconut pie
My Mother-in-law introduced me to this recipe about 40 years ago. When my boys were teens, I would make three of these at a time. One for each boy and one for the rest of us. This has one of those crusts that settle to the bottom of the pan. It doesn't crisp up but it makes up for it by the ease of assembly.

Ingredients
- 2 cups milk
- 1/4 cup butter,melted
- 3/4 cup sugar
- 1 1/2 teaspoons vailla
- 1/2 cup biscuit mix (i use jiffy or bisquick)
- 4 - eggs
- 1 cup coconut
How To Make tina's amazing coconut pie

Step 1butter a deep dish pie pan or 10 inch pie pan or an 8x8 or 9x9 baking pan.

Step 2Put all the ingredients, except coconut in a blender and blend for 3 minutes

Step 3Pour into pie pan and let settle 5 minutes.

Step 4Top with coconut and bake 350 degrees for 40 minutes
