I plucked this out of my Mother-in-law's recipe box after she passed away. It is dated 3-13-75 She made a note on it she had received it form Eunice Bauer....and most of her great dessert recipes came from Eunice. Again another great pie that settles it's own crust.

Ingredients

4baking po - eggs
1 cup sugar
1/2 cup flour
1/4 teaspoon baking powder
dash - salt
1 cup coconut
1 teaspoon vanilla
2 cups milk
1/4 cup butter, melted

How To Make tina's amazing coconut custard pie

Step 1

beat all with a hand mixer for 2 minutes.

Step 2

Pour into well greased 8x8, 9x9 inch baking pan or a 10 in pie pan or deep dish pie pan. Let rest 5 minutes.
Step 3

Bake 325 degrees for 1 hour
