Ingredients For sweet potatoe pie mini's

  • 10
    sweetpotatoes ,peeled and quartered
  • 1/4 c
  • 1/2 tsp
  • 1/2 tsp
    vanilla extract
  • 1/2 can
    evporated milk
  • 1/2 c
    argo starch
  • 1/4 c
  • 1/4 c
    grandulated sugar
  • 2 pkg
    flaky pie crust \or you can make your own

How To Make sweet potatoe pie mini's

    in a lg sauce pan put all the ingredients except the milk and starch lightly sauté
  • 2
    while sautéing mix the starch and milk together, then pour into the sweet potato mixture, let cook on low until potatoes are soft and falling apart and sauce is thick

    mix with mixer or\ use a masher and mash well until there are no lumps,and set aside
  • 4
    ok now with your pastry dough line your muffin pan just as you would a pie pan, then fill with your mixture

    place in the oven at 350 degrees and bake for 35 minutes or until golden brown

    let cool then score out and place on desert tray \or plate and you can serve topped with whipped cream or vanilla ice cream
