sweet potato pie

I went to our local patch this past weekend and let me tell ya it was slim pickins this year. They didn't have my fav squash that I like to make pie's with so I will have to go on a search next weekend. They did have sweet potatoes so thats what I had to play with this weekend. Enjoy!!! My family like's pumpkin and sweet potato pie to be a litte more thicker in consistency than most other's so if you like a more wet pie just increase the half and half to 1/2 a cup.

Ingredients

  • 2 large sweet potatoes
  • 1/4 stick butter, softened
  • 3/4 cup splenda or sugar
  • 1 large egg
  • 1/4 cup half and half
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

How To Make sweet potato pie

  • Step 1
    Preheat oven to 350.
  • Step 2
    Bake sweet potatoes until tender about a hour, let cool until you can handle them.
  • Step 3
    Cut potatoes in half and scoop out pulp place into a mixing bowl (I use a kitchen aid) add butter and beat on med high until creamy, add all the other ingredients and beat on med speed until mixed well.
  • Step 4
    Spread into unbaked pie shell and bake at 350 for 50 to 60 minutes middle should start to turn golden brown.
