Ingredients For sweet potato pie

  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup evaporated milk
  • 1 (29-oz.) can cut sweet potatoes packed in syrup, drained well and mashed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 (9-inch) unbaked pie crust

How To Make sweet potato pie

    In a large bowl mix butter and sugar together, with an electric mixer.

    Add the eggs; mix well.

    Now add the evaporated milk, sweet potatoes, vanilla extract, cinnamon, nutmeg and salt; mix well. Then pour into unbaked pie crust.

    Bake in a 425°F oven for 15 minutes.

    Reduce oven temperature to 350°F, and continue baking the pie for 35 minutes, or until a knife inserted near the center of pie comes out clean.

    Allow pie to cool, then store in refrigerator (uncovered) until ready to serve.

    *Note: Before placing the pie in the oven, I did place a pie shield over the pie crust. This helps to prevent the crust from getting too dark. After removing the pie from the oven, carefully remove the pie shield. Allow the pie to cool, then refrigerate the pie. If desired, before serving the pie, top with whipped cream, and lightly sprinkle a bit of McCormick's Pumpkin Pie Spice over the whipped cream.
