sweet potato pie

Sweet potato pie shows up at lots of Texas barbecues! This recipe comes from Barbecue Crossroads by Walsh NOTE: I used a ready made 9" pecan crust. It looked kind of small, so I used 2 c. sweet potatoes, 3/4 c brown sugar, 2 eggs, 3/4 c. evaporated milk, about 6 T of butter and a little bit less spices. It worked!

Ingredients

  • 1 - unbaked pie shell (buy or make your own)
  • 3 cups baked, peeled, mashed sweet potato
  • 1/2 cup butter, softened
  • 1 cup brown sugar, packed
  • 3 - eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 cup evaporated milk

How To Make sweet potato pie

  • Step 1
    preheat oven to 350ºF. Cream butter and brown sugar, beat eggs and add to mixture.
  • Step 2
    Stir in salt, vanilla and spices.
  • Step 3
    Add sweet potatoes and evaporated milk and beat with electric mixer until smooth. Pour into pie shell and bake about 1 hour, until center is firm.
