sweet potato pie
Sweet potato pie shows up at lots of Texas barbecues! This recipe comes from Barbecue Crossroads by Walsh NOTE: I used a ready made 9" pecan crust. It looked kind of small, so I used 2 c. sweet potatoes, 3/4 c brown sugar, 2 eggs, 3/4 c. evaporated milk, about 6 T of butter and a little bit less spices. It worked!

Ingredients
- 1 - unbaked pie shell (buy or make your own)
- 3 cups baked, peeled, mashed sweet potato
- 1/2 cup butter, softened
- 1 cup brown sugar, packed
- 3 - eggs
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/8 teaspoon ground cloves
- 1/4 teaspoon ginger
- 1/8 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1 cup evaporated milk
How To Make sweet potato pie

Step 1preheat oven to 350ºF. Cream butter and brown sugar, beat eggs and add to mixture.

Step 2Stir in salt, vanilla and spices.

Step 3Add sweet potatoes and evaporated milk and beat with electric mixer until smooth. Pour into pie shell and bake about 1 hour, until center is firm.
