Ingredients
- 1 pound whole-milk cottage cheese
- 1/2 cup sugar
- 1/8 teaspoon salt
- 3 - eggs
- 2/3 cup whole milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon nutmeg, freshly grated
- 1 - prepared chocolate graham cracker pie crust
- - fresh strawberries for garnish
- STRAWBERRY SAUCE
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 2 cups sliced fresh strawberries
- 1/2 cup water
How To Make sweet cottage cheesecake with strawberry sauce

Step 1Place oven rack in middle position and preheat oven to 350 degrees.

Step 2In the mixing bowl of a food processor, add together the cottage cheese, sugar, salt, eggs, milk, vanilla and nutmeg. Pulse on and off until the mixture is smooth. Pour mixture into prepared pie crust and place on a cookie sheet and into the oven. Bake until the filling is puffed and golden and lightly set--about one hour.

Step 3Remove from oven and cool on a rack until just warm--about 30 minutes. To serve immediately, sto with strawberry sauce and serve. OR, refrigerate at this point and add strawberry sauce just before serving.

Step 4STRAWBERRY SAUCE: In a saucepan, stir together 1/2 cup sugar, 1 T. cornstarch, 2 cups sliced fresh strawberries and 1/2 cup water. Cook and stir on medium heat until mixture thickens and bubbles. Then cook 2 minutes more. Remove from heat and cool. Yield about 1 1/2 cups.
