summer essentials: lemon custard ice box pie
If you are looking for the sweet tastes of summer, this is one of them. A great lemony taste balanced with a graham cracker crust. No baking for this dessert, just assemble the parts and put it in the fridge or freezer. Over the last week, I posted two recipes used in the making of this pie (lemon curd and graham cracker crust), you can choose to use them, or make your own. You could even purchase a premade crust and lemon curd at the store. Up to you. So, you ready… Let’s get into the kitchen.

- 16 ounces cream cheese, at room temperature
- 3/4 cup heavy cream
- 1 cup lemon curd, recipe link to follow
- 1 9-inch graham cracker crust, recipe link to follow

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 4Make the lemon curd and crust, then put them into the fridge until ready to use.

Step 5Add the room temperature cream cheese and heavy cream into a stand mixer with a paddle attachment, or a food processor, fitted with an S-blade.

Step 6Mix until smooth.

Step 7If your cream cheese is soft enough, you could always mix this by hand with a whisk.

Step 8Add the lemon curd.

Step 9Carefully fold until thoroughly mixed.

Step 10Add the filling to your pie crust and refrigerate for one hour, then transfer to the freezer for at least two hours, until ready to serve.

Step 11Defrost, then cut slices and serve cold. Store in the freezer, covered, for up to two weeks.
