My husband is diabetic, so I came up with a sugar free pie that he could enjoy. It also helps with our waistlines.

Ingredients

reduced fat graham cracker pie crust
8 oz
sugar free cool whip
1 box
sugar free sugar free instant french vanilla or banana pudding mix
1 1/2 c
low fat 2% milk
11 oz
mandrin oranges
1 small
can crushed pineapple
2
bananas - sliced
1/4 c
shredded coconut - optional
1/8 c
toasted coconut - optional

How to Make Sugar Free Tropical Pie

Step-by-Step

  • 1Prepare crust: slice the 2 bananas and line them in the bottom of the low fat graham cracker crust.
  • 2Mix 1 small box of instant sugar free french vanilla or banana creme pudding and 1 1/2 cup low fat milk. Mix with mixer or blender for 2-3 minutes.
  • 3Add to the pudding the small cans of mandrin oranges and pineapple, then add coconut.
  • 4Gently fold the Cool Whip into the pudding and fruit mixture.
  • 5Pour the mixture on top of bananas in the crust.
  • 6If you want at this point you can add toasted coconut and/or sliced bananas to the top of the pie.
  • 7Refrigerate for 1 hour before serving.
