Ingredients
- 1 1/2 cups sugar
- 3 tablespoons quick cooking tapioca
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 3 cups rhubarb, chopped
- 1 cup sliced strawberries
- 2-3 tablespoons unsalted butter
- 1 - egg white beaten
- 2 - unbaked pie shells
How To Make strawberry-rhubarb pie

Step 1Heat oven to 400 degrees

Step 2Combine sugar, tapioca, salt and nutmeg. Add rhubarb and strawberries. Mix to coat fruit, let stand 20 minutes.

Step 3Line pie plate with pastry. Fill with mixture and dot with butter.

Step 4Top with second pie shell. (or make a lattice top) Cut slits in pie shell and seal. Brush with beaten egg white, and sprinkle with sugar.

Step 5Bake 35-40 minutes
