strawberry marshmallow pie (sugar-free, or not)

I made two of these pies the other night. I wanted to make something for my friend and her husband (He is a diabetic -loves sweets.). He has been very sick. since I didn't want to make a heavy, sugar-laden pie, I ended up making two pies, one sweetened with sugar-free gelatin; and the other one with regularly, sweetened gelatin. This is a light pie with only 4 ingredients plus a graham cracker or chocolate cookie crust. Their preacher came to visit and also is a diabetic. They all enjoyed the pie! I enjoyed making it (and having a slice) It's EASY, QUICK -and light! Pie anyone??

Ingredients For strawberry marshmallow pie (sugar-free, or not)

  • 3 oz
    gelatin (sweetened with or without sugar)
  • 10 oz
    frozen and/or strawberries (sweetened or unsweetened)
  • 2 c
    minature marshmellows
  • 1 c
    heavy whipping cream, whipped
  • 1
    graham cracker pie crust (or chocolate pie crust)

How To Make strawberry marshmallow pie (sugar-free, or not)

    Dissolve a 3 ounce package of gelatin in one cup of boiling water. For your needs and likes, choose to use gelatin sweetened with sugar, or sugar-free (sweetened with Splenda or other artificial sweetener.)

    Add 10 ounce of frozen strawberries or a combination of fresh and frozen. You can use sweetened or unsweetened. If you use fresh strawberries, don't sweeten. Stir well until the strawberries separate (if frozen) and gelatin mixture thickens.

    Fold in 2 cups of mini marshmallows. NOTE: If a diabetic, you may need to do an exchange for the marshmallows. If using the sugar-free gelatin, they are the only ingredient that contains sugar (and there would be a smidgen in the cookie crust.) If you didn't want to use a bought crust that contains sugar -you can easily make your own crust without any sugar or sweetener. You be the judge on what you can and can't have.

    Fold in 1 cup of whipped heavy (whipping) cream.

    Pour into a 9-inch cookie crust -graham or chocolate cookie.

    Decorate with sliced fresh strawberries, if desired. Chill until firm.
