strawberry margarita pie
This was a lost recipe which I submitted to a church cookbook in 1999. I recently found the cookbook. It takes a little extra effort to make but well worth it.

Ingredients
- PRETZEL CRUST:
- 1/2 cup butter
- 1/4 cup granulated sugar
- 2/3 cup pretzels, crushed
- 1 teaspoon powdered sugar
- FILLING:
- 24 large marshmallows
- 2/3 cup evaporated milk
- 1 cup fresh strawberries, hulled & mashed (or frozen, thawed & drained)
- 1/4 cup tequila (divided)
- 1/3 cup fresh lime juice
- 2 - 8-oz. containers whipped topping (divided)
- 1/8 teaspoon red food color
- GARNISH:
- 2 - fresh limes, sliced
- 1/4 cup macadamia nuts, chopped
How To Make strawberry margarita pie

Step 1To make pie crust: lightly grease a 9-inch pie plate or dish

Step 2Melt butter; add sugar and pretzels, mixing well.

Step 3Press into prepared plate or dish

Step 4Bake at 450 degrees for 9-11 minutes.

Step 5Cool COMPLETELY; dust with powdered sugar.

Step 6In medium glass bowl, heat marshmallows and milk in microwave on HIGH for 2 minutes.

Step 7Remove from microwave; stir until smooth.

Step 8Return to microwave; heat 1 additional minute on HIGH.

Step 9Remove 1/2 cup mixture to separate bowl.

Step 10Fold in strawberries until mixture is smooth.

Step 11Stir in 2 tablespoons of the tequila and lime juice.

Step 12Add remaining tequila to plain mixture.

Step 13Chill both mixtures for 20 minutes until thickened.

Step 14Divide 2 cups of the whipped topping between each mixture, folding gently.

Step 15Spoon strawberry mixture into cooled pretzel crust.

Step 16Spread plain mixture on top.

Step 17Refrigerate 2 hours or until firm.

Step 18Garnish with remaining whipped topping and lime slices.

Step 19Sprinkle with nuts.
