This is such a cool summer time dessert for strawberry lovers. It's great for a potluck or for the family. I've had the recipe for years and made it quite a lot when my children were growing up. I have since started using light ingredients when I can.

Ingredients

  • - crust:
  • 1 cup chopped pecans
  • 1 cup flour
  • 1 - stick melted butter (i use smart balance)
  • 2 tablespoons sugar or sweetner
  • - 2nd layer:
  • 8 ounces softened lite cream cheese
  • 9 ounces cool whip or 2 pkgs. dream whip
  • 1/2 - box confectioners' sugar, sifted
  • - 3rd layer:
  • 1 - pkg. strawberry glaze (i use sugar free)
  • - strawberries, sliced or chopped, sweeten to your taste with sugar or splenda

How To Make strawberry delight

  • Step 1
    Preheat oven to 325 degrees. Spray 9x13 pan with cooking spray. Mix crust ingredients well and pat into baking dish. It will be a thin crust. Bake 20 minutes. Cool completely. Mix 2nd layers' ingredients by mixing cream cheese with confectioners' sugar with a mixer until smooth. Fold in whipped topping with a spatula or spoon. In another bowl mix strawberry glaze with sweetened strawberries. Spread cream cheese mixture over crust. Top with strawberry mixture, spread evenly. Cover and refrigerate.
