Strawberry Cream Pie

I adapted this from a recipe i found in an old cook book of my moms.

pre-baked pie shell
1 qt
strawberries, sliced
1 c
1/4 oz
packet of unflavored gelatin
1/2 c
cold water
2 tsp
lemon juice, fresh
1 c
heavy whipping cream, whipped


1In a large bowl combine sliced strawberries and sugar ;let stand for 15 minutes. In a small sauce pan sprinkle gelatin over cold water; let stand for 1 min. Cook and stir over medium heat until gelatin is dissolve; stir in lemon juice. stir into strawberry mixture. Cool to room temperature. fold in whipping cream. Pour into pie crust. Refrigerate for at least 4 hours, then serve. (you can reserve a couple of the strawberries for garnish)
