Mom's strawberry pie is something I have never been able to duplicate. With my love of that pie, and cheesecake, this dessert seems to be the closest I have been able to get, and that's just fine with me! This one is one from her mom, Grandma W.

Ingredients
- - 9" pie crust, deep dish
- 8 ounces cream cheese
- 1 tablespoon sugar
- 1/2 cup sugar
- 4 teaspoons cornstarch
- 1 1/2 quarts strawberries, hulled and halved
- - whipped cream or cool whip

Step 1Prepare crust to directions, cool. Combine cream cheese and 1 T sugar, pour into crust. Puree half strawberries and combine in saucepan with remaining sugar and cornstarch. Cook and stir over med-low heat until thick and clear, about 7-10 min. Remove from heat, stir in remaining strawberries and let cool 10 min before pouring into crust. Refrigerate 3 hours or more, serve with whipped cream.

Step 2For regular pie crust, the ingredients are: 6 oz cream cheese 2 t sugar 1 quart strawberries 1/3 c sugar 3 t cornstarch. Pie is prepared the same way as above.
