A real treat for my husband. He loves pecan pie, but this one runs a close second. Sticky, ewey gooey goodness!

Ingredients

  • 1/4 cup cold butter, sliced thin
  • 1 cup sugar
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 cup each - light corn syrup, sweetened coconut and quick oats or old fashioned - have used both
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 - 9 - inch unbaked pie crust

How To Make ~ sticky oatmeal coconut pie ~

  • Step 1
    Using my kitchen aid mixer, I cream together the butter and sugar, until fluffy.
  • Step 2
    Add remaining ingredients, beat until thoroughly combined.
  • Step 3
    Pour into prepared crust. Bake at 400 degree F for 10 minutes, then reduce oven to 350. Continue baking for 35 to 40 minutes or until filling is just slightly jiggly. Remove from oven and cool on rack.
  • Step 4
    Serve with or without ice cream.
