~ sticky oatmeal coconut pie ~
A real treat for my husband. He loves pecan pie, but this one runs a close second. Sticky, ewey gooey goodness!

Ingredients
- 1/4 cup cold butter, sliced thin
- 1 cup sugar
- 2 - eggs
- 1 teaspoon vanilla extract
- 1 cup each - light corn syrup, sweetened coconut and quick oats or old fashioned - have used both
- 1/2 cup water
- 1/2 teaspoon salt
- 1 - 9 - inch unbaked pie crust
How To Make ~ sticky oatmeal coconut pie ~

Step 1Using my kitchen aid mixer, I cream together the butter and sugar, until fluffy.

Step 2Add remaining ingredients, beat until thoroughly combined.

Step 3Pour into prepared crust. Bake at 400 degree F for 10 minutes, then reduce oven to 350. Continue baking for 35 to 40 minutes or until filling is just slightly jiggly. Remove from oven and cool on rack.

Step 4Serve with or without ice cream.
