spinach pie - diabetic friendly

This recipe was given to me by our dear friends Tom and Barb. They thought I would like it because it is diabetic friendly. They were right, I do like it. Even my wife likes it and she is a fussy eater. It worked great for me eating it the next several days. You can warm it up or eat it cold. This is good for anybody, not just diabetics.

Ingredients

  • 4 ounces whole wheat angel hair pasta
  • 3/4 cup eggbeaters
  • 1/2 cup light sour cream
  • 1/4 teaspoon garlic powder
  • 1/4 cup basil
  • 3 1/4 teaspoons red pepper flakes
  • 10 ounces spinach, frozen (i use fresh)
  • 8 ounces fat free cream cheese
  • 1 cup reduced fat cheese
  • 2 cups turkey/chicken breast (meat of your choice)

How To Make spinach pie - diabetic friendly

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Coat a 9" deep-dish pie plate (I used a 9" springform pan and it worked great) with cooking spray.
  • Step 3
    Cook the turkey/chicken, let cool. Then cut up the turkey/chicken in small pieces.
  • Step 4
    Cook pasta and drain. Put aside.
  • Step 5
    In a bowl, beat cream cheese till smooth, gradually beat in eggs and light sour cream.
  • Step 6
    Stir in Basil, garlic powder and red pepper. Mix well. Continue adding the turkey/chicken, spinach, cheese and pasta.
  • Step 7
    Spread into prepared pan.
  • Step 8
    Bake, uncovered for 45-50 minutes. Let stand for 10 minutes before cutting it into wedges.
