My friend, Patty, gave me this recipe years ago and it makes absolutely the best sweet potato pies I have ever eaten. I sincerely hate to admit this, as Patty is my ex-husband's wife! She, too, is a really good cook. Thanks, Patty for the recipes all thru the years!

Ingredients

  • 1 1/2 cups cooked sweet potatoes, mashed
  • 3 tablespoons flour
  • 3 cups sugar
  • 1 1/2 sticks butter, melted
  • 1 1/2 tablespoons vanilla extract
  • 5 large eggs, beaten
  • 12 ounces can of evaporated milk
  • 1 package frozen deepdish pie shells

How To Make southern sweet potato pies

  • Step 1
    Place sweet potatoes into mixer bowl and add the sugar and the flour. Blend.
  • Step 2
    Add eggs and evaporated milk. Blend well.
  • Step 3
    Add the vanilla. Beat 2 min. with mixer to help remove any strings in sweet potatoes.
  • Step 4
    Add the melted butter and blend well.
  • Step 5
    Pour into 2 uncooked pie shells.
  • Step 6
    Bake 1 hour in a preheated 350 degree oven. Center will be jiggly when done. Remove from oven and cool on rack.
  • Step 7
    Store leftovers in refrigerator.
