southern sweet potato pies

My friend, Patty, gave me this recipe years ago and it makes absolutely the best sweet potato pies I have ever eaten. I sincerely hate to admit this, as Patty is my ex-husband's wife! She, too, is a really good cook. Thanks, Patty for the recipes all thru the years!

Ingredients
- 1 1/2 cups cooked sweet potatoes, mashed
- 3 tablespoons flour
- 3 cups sugar
- 1 1/2 sticks butter, melted
- 1 1/2 tablespoons vanilla extract
- 5 large eggs, beaten
- 12 ounces can of evaporated milk
- 1 package frozen deepdish pie shells
How To Make southern sweet potato pies

Step 1Place sweet potatoes into mixer bowl and add the sugar and the flour. Blend.

Step 2Add eggs and evaporated milk. Blend well.

Step 3Add the vanilla. Beat 2 min. with mixer to help remove any strings in sweet potatoes.

Step 4Add the melted butter and blend well.

Step 5Pour into 2 uncooked pie shells.

Step 6Bake 1 hour in a preheated 350 degree oven. Center will be jiggly when done. Remove from oven and cool on rack.

Step 7Store leftovers in refrigerator.
