southern cracker-onion pie

My sis-in-law, Karen, who is from Georgia swears by this yummy pie and I have to agree it is special. Just remember to only use Vidalia onions!! I'm actually surprised she gave me the recipe, it's been her secret recipe for awhile:) She must love me, lol.

Ingredients
- 1 cup crushed saltine crackers
- 2/3 cup melted butter, divided
- 2 large vidalia onions, thinly sliced
- 4 - eggs
- 1 cup 2% milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup shredded cheddar cheese
How To Make southern cracker-onion pie

Step 1Heat oven to 350. Lightly spray a 9" pie pan w/ cooking spray. It's best to use a deep dish for this. In bowl, combine crushed crackers w/ 1/3 cup melted butter until crumbly. Press mix into bottom and up sides of pie pan.

Step 2In lg skillet, over med-high heat, saute onions in remaining butter until tender, stirring often. Pour onions into pie crust.

Step 3In another bowl, whisk together eggs, milk, salt and pepper. Pour over onions. Sprinkle cheese over top. Bake 45 mins or until center is set. You can cover w/ foil if cheese is browning too quick, but remove foil the last 10 mins. Cut into wedges.
