Ingredients For shaker lemon pie

  • CRUST
  • 1 1/2 c
    flour
  • 1/4 c
    sugar
  • 1/2 c
    butter or margarine
  • FILLING
  • 2
    large lemons
  • 1
    egg, separated
  • 3
    additional eggs, beaten
  • 2 c
    sugar

How To Make shaker lemon pie

  • 1
    For Crust: In food processor or with pastry blender, combine butter, sugar and flour until mixture resembles course crumbs. Pat into 10" pie plate.

    Brush bottom of crust with egg yoke. Shield edges of crust with pie shield or strips of foil and bake at 375 for 5 minutes.

    For filling: Slice lemons, rind and all, paper-thin, removing seeds as you slice. Combine with sugar and let stand 2 hours or longer.

    Add remaining egg white to the other three beaten eggs and combine well. Add to lemon and sugar mixture.

    Pour filling into crust. With shield in place, bake for 30 minutes or until center jiggles only slightly. Cool for 2 hours before serving.
