This is one of my favorite desserts to make in the summertime. Very refreshing!

Ingredients

CRUST

1 1/2 c
flour
1/4 c
sugar
1/2 c
butter or margarine

FILLING

2
large lemons
1
egg, separated
3
additional eggs, beaten
2 c
sugar

How to Make Shaker Lemon Pie

Step-by-Step

  • 1For Crust:
    In food processor or with pastry blender, combine butter, sugar and flour until mixture resembles course crumbs. Pat into 10" pie plate.
  • 2Brush bottom of crust with egg yoke. Shield edges of crust with pie shield or strips of foil and bake at 375 for 5 minutes.
  • 3For filling:
    Slice lemons, rind and all, paper-thin, removing seeds as you slice. Combine with sugar and let stand 2 hours or longer.
  • 4Add remaining egg white to the other three beaten eggs and combine well. Add to lemon and sugar mixture.
  • 5Pour filling into crust. With shield in place, bake for 30 minutes or until center jiggles only slightly. Cool for 2 hours before serving.
