saltine cracker pie

Got this recipe from a dear family friend, Virginia Haynes, years ago & it has been a favorite ever since. Hope it becomes yours too. This pie makes it's own crust & is super easy.

Ingredients
- 3 - egg whites
- 1 cup sugar
- 1 teaspoon vanilla extract
- 14 - saltine crackers
- 3/4 cup pecan pieces
- 1 teaspoon baking powder
- 1 teaspoon butter or marg.
How To Make saltine cracker pie

Step 1Heat oven to 350 degrees .

Step 2Butter a pie pan & set aside .

Step 3Crumble crackers very fine & put in a med mixing bowl. Add pecan pieces & baking powder . Stir to mix .

Step 4Beat egg whites till stiff . Add sugar and vanilla & beat together

Step 5Pour egg whites over cracker mixture & fold together until well mixed . Pour into pie pan & bake until golden brown & crusty . Cool completely .

Step 6I top with whipping cream or have it on the side . Some of my family don't like whipped cream, go figure ! Lol
