Of all the pie in the world I think this is my favorite. My Mother use to make this when we went to dinner. She is long gone now but I can still enjoy this pie and the memories it brings.

Ingredients

1 c
brown sugar
3 tsp
butter or margarine
4 tsp
cream
1 c
milk
6 tsp
flour ( level)
1
egg yolk well beaten

How to Make Rosie's Butterscotch Pie

Step-by-Step

  • 1cook brown sugar, butter and cream mixture together until brown. the browner it is the more butterscotch flavor it has.
    Mix milk, flour and egg yolk together well. Pour this mixture into the first mixture and stir constantly until thick and smooth, It will look like a mess at first but keep stirring. Pour into baked pie shell. Cover with meringue and brown.
