rocky road sweet potato pie
I created this sweet potato pie recipe, keeping the flavors of rocky road in mind. The pie crust is a new concoction and it's delicious.

Ingredients
- 1 cup heavy cream
- 3/4 cup chocolate syrup
- 8 ounces cream cheese, softened
- 1 cup chopped chocolate covered almonds
- 1 9-inch unbaked pie crust
- 3 large sweet potatoes, peeled and cut in half
- 4 tablespoons margarine
- 1 cup light brown sugar
- 1/2 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 3 eggs
- 3/4 cup chocolate milk
- 1 cup milk chocolate chips
- 1 cup honey roasted peanuts
- 1 cup miniature marshmallows
How To Make rocky road sweet potato pie

Step 1In a medium bowl, combine heavy cream, chocolate syrup, cream cheese and chopped chocolate covered almonds; whisk together until blended.

Step 2Spread the bottom and sides of pie crust. Cover with aluminum foil and refrigerate for 3 hours.

Step 3Preheat oven to 365 degrees F.

Step 4Place sweet potato pieces in a large saucepan, add salted water to cover by 1 inch. Bring to a boil. Cook the potatoes until soft, 15 to 20 minutes. Drain well.

Step 5Transfer to a large bowl and mash throughly with a potato masher.

Step 6Add margarine, brown sugar, ground allspice, cinnamon, eggs and chocolate milk.

Step 7Beat with a fork for 5 minutes or until combined. Add chocolate chips, peanuts and marshmallows.

Step 8Spoon into a prepared pie crust. Bake at 365 for 1 hour. Cool completely. Drizzle with chocolate syrup.
