I created this sweet potato pie recipe, keeping the flavors of rocky road in mind. The pie crust is a new concoction and it's delicious.

Ingredients For rocky road sweet potato pie

  • 1 c
    heavy cream
  • 3/4 c
    chocolate syrup
  • 8 oz
    cream cheese, softened
  • 1 c
    chopped chocolate covered almonds
  • 1
    9-inch unbaked pie crust
  • 3 lg
    sweet potatoes, peeled and cut in half
  • 4 Tbsp
    margarine
  • 1 c
    light brown sugar
  • 1/2 tsp
    ground allspice
  • 1 tsp
    ground cinnamon
  • 3
    eggs
  • 3/4 c
    chocolate milk
  • 1 c
    milk chocolate chips
  • 1 c
    honey roasted peanuts
  • 1 c
    miniature marshmallows

How To Make rocky road sweet potato pie

    In a medium bowl, combine heavy cream, chocolate syrup, cream cheese and chopped chocolate covered almonds; whisk together until blended.

    Spread the bottom and sides of pie crust. Cover with aluminum foil and refrigerate for 3 hours.

    Preheat oven to 365 degrees F.

    Place sweet potato pieces in a large saucepan, add salted water to cover by 1 inch. Bring to a boil. Cook the potatoes until soft, 15 to 20 minutes. Drain well.

    Transfer to a large bowl and mash throughly with a potato masher.

    Add margarine, brown sugar, ground allspice, cinnamon, eggs and chocolate milk.

    Beat with a fork for 5 minutes or until combined. Add chocolate chips, peanuts and marshmallows.

    Spoon into a prepared pie crust. Bake at 365 for 1 hour. Cool completely. Drizzle with chocolate syrup.
