roasted sweet tater pie
I’ve never been a fan of pumpkin or sweet potato pies, but I came across this recipe and made a few changes here and there. This has a different taste than the average potato pie. Enjoy!

Ingredients
- 1 1/2 pounds sweet potatoes
- 1 stick butter softened
- 1 unbaked pie shell
- 1/2 sugar
- 1/2 brown sugar, firmly packed
- 1/2 whipping cream
- 1 teaspoon vanilla
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 eggs
- a handful of chopped pecans (optional)
How To Make roasted sweet tater pie

Step 1Preheat oven to 400. Bake taters for one hour. Once done remove them from the oven and bump the temp down to 350.

Step 2Slice taters open long ways and spoon the insides into you large mixing bowl. Blend with your hand mixer until smooth then add your softened butter. Blend well.

Step 3Add remaining ingredients in order blending well periodically. Pour into your pie shell. At this time you can sprinkle pecans on top. Place that in a baking sheet and place in your 350 oven.

Step 4Bake for 1 hour and 15 minutes, or once a knife inserted into center comes out clean remove and let set up on a cooling rack for about an hour.

Step 5Serve with a can of whipped topping. Store in fridge.
