My friend Sue gave me this recipe many years ago. It is so simple and oh so good. Sue uses a Mrs. Smith's frozen, deep dish pie shell for this pie. Of course you may use your own home made crust if you wish.

Ingredients
- 1 - mrs. smith's frozen deep dish pie shell
- 2 pounds ricotta cheese
- 3/4 cup sugar
- 3 - eggs
- 2 teaspoons anise or almond extract (i've always used almond)
How To Make ricotta pie

Step 1Warm the frozen pie shell in oven until "dry".

Step 2Mix all ingredients well.

Step 3Pour into pie shell.

Step 4Bake for 1 1/4 hours at 350 degrees.

Step 5Remove from oven and allow to cool.

Step 6Refrigerate until chilled.
