When I was a young bride in Texas during the 60's you'd be hard pressed to come to any Texas kitchen and not find a pot of red beans either cooking or in the refrigerator. This recipe comes from a cookbook that I recieved at my wedding shower in 1966 and comes from the depression era when chocolate was not easy to come by so home cooks got creative and this red bean pie was a mock chocolate pie. It's good eating and certainly unique. Give it a shot!

Ingredients

  • 1 cup red beans
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 2 - eggs, separated
  • 1/4 cup milk (canned milk is good)
  • 1/4 cup shredded coconut
  • 1 teaspoon vanilla
  • 2 tablespoons butter
  • 1/2 teaspoon salt

How To Make red bean pie

  • Step 1
    Mash cooked beans. Combine sugar, salt and flour. Add beaten yolks, milk and beans. Cook until thick. Add butter, vanilla and coconut. Make meringue with egg whites. Pour filling into baked shell, top with meringue. Cook in slow oven til meringue is brown.
