When my son was little he loved his Nama's sweet potato pie and they made a cookbook at her school and she named it RAUL'S SWEET POTATO PIE. And even now he is a young man and we still love this pie. Hope you enjoy it too!!

Ingredients
- 4 medium sweet potatoes
- 1 stick margarine
- 1 1/2 cups brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 11/2 teaspoons cinnamon
- 4 - eggs
- 1/2 cup heavy cream
- 2 teaspoons lemon extract
- 1 teaspoon vanilla extract
- 2 - deep dish pie shell
How To Make raul's sweet potato pie

Step 1Boil sweet potatoes until well done. In a large bowl, combine 4 peeled potatoes, 1 stick margarine, 11/2 cups brown sugar, 1 cup granulated sugar and blend well.

Step 2Add to mixture 1/2 tsp., salt, 1 tsp., nutmeg 1 tea., ginger and 11/2 tsp., cinnamon. Then add 4 eggs (slightly beaten) and 1/2 cup heavy cream. Blend well until smooth.

Step 3Add 2 tsp., lemon extract and 1 tsp., vanilla extract. Pour equal amount of mixture into 2 deep dish frozen pie crust and bake at 350 for about 11/2 hours. Let cool (when done), slice and ENJOY!!!
