What can I say except that this is yummy. My husband loves pies so this is one of many that I make for him.

Ingredients
- 1 1/2 cups sugar
- 1 3/4 cups crushed pineapple, undrained
- 3 - eggs, slightly beaten
- 3 tablespoons self-rising flour
- 1 cup flaked coconut
- 3/4 stick butter or margarine, melted
- 1 - deep dish raw pie shell
How To Make ranchers pie

Step 1Preheat oven to 350. Stir together the sugar, pineapple, eggs, flour & coconut. Melt butter & add to other ingredients.

Step 2Pour filling into pie shell. Bake for approx 1 hr or until filling is set & browned.

Step 3Tip: Before filling raw pie shell, I rub a little egg white or milk onto bottom of pie shell. This will help brown bottom of curst & prevents it from being soggy.
