What can I say except that this is yummy. My husband loves pies so this is one of many that I make for him.

Ingredients

  • 1 1/2 c
    sugar
  • 1 3/4 c
    crushed pineapple, undrained
  • 3
    eggs, slightly beaten
  • 3 Tbsp
    self-rising flour
  • 1 c
    flaked coconut
  • 3/4 stick
    butter or margarine, melted
  • 1
    deep dish raw pie shell

How to Make RANCHERS PIE

Step-by-Step

  1. Preheat oven to 350. Stir together the sugar, pineapple, eggs, flour & coconut. Melt butter & add to other ingredients.
  2. Pour filling into pie shell. Bake for approx 1 hr or until filling is set & browned.
  3. Tip: Before filling raw pie shell, I rub a little egg white or milk onto bottom of pie shell. This will help brown bottom of curst & prevents it from being soggy.
