What can I say except that this is yummy. My husband loves pies so this is one of many that I make for him.

Ingredients

  • 1 1/2 cups sugar
  • 1 3/4 cups crushed pineapple, undrained
  • 3 - eggs, slightly beaten
  • 3 tablespoons self-rising flour
  • 1 cup flaked coconut
  • 3/4 stick butter or margarine, melted
  • 1 - deep dish raw pie shell

How To Make ranchers pie

  • Step 1
    Preheat oven to 350. Stir together the sugar, pineapple, eggs, flour & coconut. Melt butter & add to other ingredients.
  • Step 2
    Pour filling into pie shell. Bake for approx 1 hr or until filling is set & browned.
  • Step 3
    Tip: Before filling raw pie shell, I rub a little egg white or milk onto bottom of pie shell. This will help brown bottom of curst & prevents it from being soggy.
